Sustainability at UMD College Park
The University of Maryland began their sustainability journey in 2007 and during my four day rotation here I was able to see the progress that they have made. My partner and I were able to spend a day at the UMD Terp Farm, help with the UMD Campus Farmer's Market, calculate carbon footprints, write blogs and contribute to the creation of a UMD Sustainability Guide. While the rotation was short, the knowledge and experience we gained was expansive.

A Day at the Terp Farm
Currently in the midst of its third year of production, the Terp Farm works to bring UMD Dining fresh, locally grown foods throughout the entire season using greenhouses! The farm has one small greenhouse, and three large greenhouse tunnels. During our visit, we got a peak at what was growing at the farm - cilantro, dill, onions, lavender, rosemary, salad greens, swiss chard, tomatoes and more! We were also able to lend a hand preparing two seed beds and planting lettuce seeds!

UMD Campus Farmer's Market
During the Farmer's Market season UMD hosts its own campus market with a variety of vendors, including a UMD Dining vendor that has a cooking demonstration. During our visit, the chef made a butternut squash soup!

Carbon Footprint Analysis
Our food has both a carbon footprint and water footprint. The smaller the footprint, the better for the environment, and typically more nutritious for us! During this rotation, my partner and I learn how to calucalte these different footprints and used these calculations to analyze some of the dishes offered by UMD Dining.
